YOU ARE WHAT YOU DRINK...The debate over childhood obesity and flavored milk

Here are some chilling facts on the next generation: Nearly one in three (32%, 23 million) American children are obese or overweight. In total, 17% of children of all ages are obese, but this rises to over 25% in all but three states for ages 10-17 (7). Most obese children (over 80%) will also be obese as adults. The federal school meals budget is $11.9 billion a year.  By comparison, healthcare spending on obesity is already $147 billion.   There has been an ongoing debate about the benefits and the detriments of flavored milk.  Most schools now serve either 2% or skim (1%) milk as opposed to whole fat milk. The reason????? The caloric/fat content of whole milk.  Whole milk contains usually between 3.25% and 4.0% fat, whereas 2% obviously contains 2% fat, with naturally occuring sugars (lactose) in it.  There are approximately the same amount in whole vs. skim 12-13 grams or about 3 teaspoons. Provencal Tomato Sauce

When you think about Provence the flavours that come to  mind are tomato, onion, garlic , herbes de Provence and wine.  This sauce is GREAT and often served with fried zucchini/courgette flowers, but is equally good with  chicken, fish and pasta. Serves 4 1tablespoon/15ml olive oil 1 large shallot or a small onion, minced 1 clove of garlic, pureed or minced 1 teaspoon/5ml Herbs de provence 4 large Roma tomatoes, diced 1/2 cup/125ml dry white wine 1/2 cup/125ml chicken or vegetable stock 1/2 teaspoon/2ml salt 1/4 teaspoon/1ml fresh black pepper Small handful of fresh parsley, chopped In a medium sauce pan on medium high heat add olive oil.  When oil is heated up (10 seconds) add the shallot, stir and cook for about 30 seconds, ad the garlic and herbs de provence.  Stir and let cook for 1-2 minutes. Spicy Honey-Glazed Chicken Breasts Recipe

Spicy Honey-Glazed Chicken Breasts Recipe Ingredients: 1/4 cup/60ml extra-virgin olive oil 1 small onion, finely chopped 1 clove garlic, finely chopped 1/2 cup/125ml honey 2 teaspoon/10mls hot pepper sauce 1/2 teaspoon/2ml chili powder 1 teaspoon/5ml lemon juice 8 skinless, boneless chicken breasts (about 4 pounds) Salt 1 pineapple peeled, cored and cut into 8 thick rings Directions: In a small saucepan, heat 1 tablespoon/1 olive oil over medium heat. Add the onion and garlic and cook, stirring, until translucent and beginning to brown, 6 to 8 minutes. Add the honey, hot pepper sauce and chili powder and simmer for 1 minute. Remove from the heat, stir in the lemon juice and set aside. Preheat a grill or large grill pan to medium-high. Rub the chicken with the remaining 3 tablespoons/45ml olive oil and season with salt. Grill until well marked, about 7 minutes. Flip and cook until the bottoms are well marked and the chicken is cooked through, another 2 minutes.

Gluten Free Pressure Cooker Baby Bella Risotto

Serves 4 ¼ cup/60ml olive oil 4 tablespoons/60g/ vegan butter, divided 1 medium onion, diced 2 garlic cloves, minced 1 tsp/5ml fennel seed 8 ounces/225g baby portabella mushrooms, sliced 1 ½ cups/343ml/316g arborio rice ½ cup/125ml dry white wine 3 ½ cups/875ml chicken stock 1 cup/225ml/180g parmesan cheese (sub with vegan soy/nut free mozzarella) In a pressure cooker, heat olive oil and half of the butter. Add onion and garlic. Saute until translucent (2-3 minutes). Add fennel seed, mushrooms and rice. Stir until rice is coated with oil. Pour in wine and cook until most of the wine is evaporated. Add chicken stock. Cover and bring up to high pressure.  Lower heat and stabilize. Cook for 7 minutes. Release pressure and remove the lid. Caesar Salad Recipe

You can do all of this in a food processor.  Start by adding the egg yolk, and processing it for about 20 seconds, then proceed with the directions as below.  Remember to add the oil drop by drop in the beginning. Makes enough for 4 - 6 peopled 1 head Romaine lettuces cut into bite sized pieces !/2 of baguette cut into bite sized pieces , tossed with olive oil, seasoned t taste and baked until golden brown and crunchy Caesar Dressing 1 egg yolk (room temp) 1/2 clove garlic mashed to a puree 1 anchovy mashed juice of 1/2 lemon 1/4 teaspoon/1ml worcestershire sauce 1/2 teaspoon/2ml dijon 1-2 dashes of tabasco sauce 1/4 cup/60ml olive oil 1/4 cup/45g grated parmigiana Course ground pepper to taste In a bowl add crushed garlic and anchovy, mash with a fork to combine.  Add egg yolk , lemon juice, worcestershire sauce, dijon, and tabasco. Whisk to combine and the yolk gets thick.  Drizzle in oil while whisking and it get thick like mayo. Add parmesa
