Columbus Day is a U.S. holiday that commemorates the landing of Christopher Columbus in the New World on October 12, 1492. Tips On Eating Healthy

Here are some tips to stay healthy: Slow down on the sodium:  Americans eat more than double the daily amount of sodium recommended by the American Heart Association.  Too much sodium  increases the risk of heart disease, stroke and other health problems, but this excess isn’t just from salting at the table. Americans get most of their sodium — 77 percent — from  processed foods . If you choose these foods, compare the labels and look for lower-sodium versions.   Pile on the fruits and vegetables:  Choose all kinds of fruits and vegetables — fresh, frozen, canned, juiced and dried. Fruits and vegetables contain vitamins, minerals and other nutrients. Look for fruits and vegetables of many different colors. Then try a “healthy sauté” using a small amount of liquid to cook vegetables. Need a quick, healthy weeknight dinner? Try a salad. Tarte Tatin Recipe

There is some controversy as to how this divine dessert (tarte solognote) came about. Was it an accident (as so many kitchen   wonders are) or was it just an improved upon recipe of the region? In any case it was made popular at by 2 sisters that ran the Hotel Tatin 100 miles (60 kilometers) outside of Paris. It was Louis Vaudable, owner of Maxim’s Paris that coined the name "tarte des demoiselles Tatin" Tart of the sister’s Tatin. Normally you would use a short crust or a pate brisee. I used a simple pie crust in our recipe as we were short on butter. Serves 6-8 9 1/2 inch/ 24 centimeter pie crust Pie Crust Ingredients: 1 1/3 cup/167 grams all purpose flour 1/2 teaspoon/2ml salt 1/2 cup/118ml vegetable (crisco) shortening or 115g cold butter 3-6 tablespoons/45-90ml iced water In a bowl add flour and salt. Whisk to combine. Cut the shortening into the flours until only small pea sized balls are visible. Mix 1 tablespoon of water at a time until the dough

Caramel Custard Recipe

Although we are NOT a fan of this dessert  October 3 is National Caramel  Custard   Day. Caramel custard, or crème caramel, is a caramel-coated baked egg custard. It takes a little bit of practice to perfect, but the result is a creamy, flavorful dessert that’s well worth the dress rehearsals. Ingredients 1/2 cup/96g sugar 3 large eggs, slightly beaten 1/3 cup/69g sugar 1 teaspoon/5ml vanilla 1/8 teaspoon/.5ml salt 2 1/2 cups/625ml very warm milk Ground nutmeg Directions 1. Heat oven to 350F/176C/Gas 4 2. Heat 1/2 cup sugar in heavy 1-quart saucepan over low heat, stirring constantly, until sugar is melted and golden brown. Divide sugar syrup among six 6-ounce custard cups; tilt cups to coat bottoms. Allow syrup to harden in cups about 10 minutes. 3. Mix eggs, 1/3 cup sugar, the vanilla and salt in medium bowl. Gradually stir in milk. Pour over syrup in cups. Sprinkle with nutmeg. 4. Place cups in rectangular pan, 13x9x2 inches, on oven rack. Pour very hot

Benefits of Apples

What makes apples so great? In 2004, USDA scientists investigated over 100 foods to measure their antioxidant concentration per serving size.  Two apples’Red Delicious and Granny Smith’ranked 12th and 13th respectively .  Antioxidants  are disease-fighting compounds.
