Chicken Piccata Recipe

I learned to make this light and tasty dish while living in Pozzuoli Italy, just outside of Napoli. Cooking class was informal in Maria's home and always with some local wine. Once you try this you will never go back to the breaded version.


Serves 4

1 pound/450g gluten free pasta* cooked al dente
2 skinless and boneless chicken breasts, butterflied and then cut in half **
Sea salt and freshly ground black pepper
3 tablespoons/45ml extra-virgin olive oil
½ cup/118ml brined capers, drained
3 tablespoons/45ml caper brine
1/3 cup/79ml fresh lemon juice
1/3 cup.70ml fresh parsley, chopped
Bring a large pot of water to a boil. Season liberally with salt (it should taste like the
ocean). Add pasta and cook to al dente.


Season the chicken with salt and pepper. In a large skillet over medium high heat, spritz with olive oil to cover pan. When oil starts to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes.

Remove and transfer to plate. Spritz with more olive oil. Add the other 2 pieces of
chicken and brown both sides. Remove pan from heat and add chicken to the plate.
Into the pan add the capers, brine, lemon juice and olive oil. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter with pasta. Pour sauce over chicken, gently mix with pasta and garnish with parsley.

* If using rice pasta, under cook package directions by 3-5 minutes and rinse thoroughly under cold water to remove excess starch.

** You can place the breasts between two sheets of plastic wrap and pounded to 1/8/.5ml thick.

INGREDIENTS 1 cup (2 sticks) butter 1 tsp Dijon mustard A dash of Tabasco sauce or a pinch of cayenne pepper 1 tbsp Worcestershire sauce Salt and freshly ground pepper 4 poussins or squab chickens, butterflied and beaten flat ½ small loaf of bread, crust removed, broken into small pieces   METHOD Take two-thirds of the butter and allow it to soften, then mix in the mustard, Tabasco or cayenne pepper, Worcestershire sauce, and some salt and pepper. Rub this mixture thoroughly over the poussins. Lay them in a large baking dish and cover with the bread pieces. Dot the remaining butter over the bread pieces. New Orleans-Style Shrimp and Fonio 'Grits'

  This recipe is a great way for anyone who is lactose or dairy intolerant to enjoy a shrimp and grits-style meal. It is super flavorful, oh-so comforting and a consistent crowd pleaser. This earthy, rustic bread cut into wedges is delicious served with any sambal or chutney. 1 1/2 cups/188g all purpose white flour 1 teaspoon/5ml/5g salt  1/2 cup/120 plus 1 tablespoon/15 hot water 1/2 cup/50g chopped scallions 1 1/2 teaspoons/7ml sesame oil 1 tablespoon/15ml canola or vegetable oil Place the flour and salt in a food processor. With the machine running, pour in the water and process until the dough almost forms a ball. Add the scallions and process until a soft ball forms. Remove the dough from the food processor and knead by hand on a floured surface for 1 minute. Cover the dough with a kitchen towel and let it rest for 10 minutes. Roll the dough out on a floured surface into an 8 1/2 inch/22cm square. Brush with sesame oil. Starting at the end nearest you, roll the dough up into a right jelly roll. To evaluate any differences between pitted and unpitted olives, we gathered both green and black brine-cured olives from deli sections at supermarkets, as well as olives packed in plastic and glass containers. After tasting many samples, it became clear that the pitted olives suffered on two counts: they tasted saltier and their flesh was mushier. Very good and moist - kids eat it as quickly as you can make it. Bread will freeze well, and keep in refrigerator for weeks. Zucch ini Bread Recipe Ingredients: 3 cups/360g all purpose/plain flour 1 teaspoon/5g salt 1 teaspoon/5g baking soda 1 teaspoon/5g baking powder 3 teaspoons/8g ground cinnamon 3 eggs 1 cup/250ml vegetable oil 2 1/4 cups/240g white sugar 3 teaspoons/15ml vanilla extract 2 cups/350g grated zucchini 1 cup/125g chopped walnuts Preheat oven to 325F/165C/Gas 3 Grease and flour two 8 x 4 inch/20 x 10cm pans.  Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.   Normally this is deep fried and full of fat, which is what you get on most movie and commercial shoots. This was served to the cast and crew shooting a commercial that was looking for healthy alternatives. I guarantee this flavour packed version will keep you coming back for more.  Serves 4 1 1/4 cups/263g long-grain brown rice 1/4 cup/40g cornstarch 1 pounds/450g snow peas, trimmed  4 garlic cloves, sliced 2 teaspoons/10ml fresh ginger, grated  3 tablespoons/12.50g light-brown sugar 2 tablespoons/30ml soy sauce ½ teaspoon/2ml red-pepper flakes 2 large egg whites ½ teaspoon/2ml sea salt  ¼ teasponn/1ml ground pepper 1 pound/250g boneless, skinless chicken breasts, cut into 1-inch pieces 2 tablespoons/30ml canola oil Cook rice according to package instructions.  In a large bowl, stir together 1 tablespoon/15ml cornstarch and ½ cup/120ml cold water until smooth. Add snow peas, garlic, ginger, sugar, soy sauce, and red-pepper flakes; toss to combine, and set aside. In another bowl, whis
