Chicken Reuben Casserole Recipe

Serves 4

4 Chicken Breast
28oz Sauerkraut, drained, and rinsed
1TB Fennel Seeds(optional)
4 Slices Swiss Cheese
1 Cup 1000 Island Dressing

Pre-heat oven to 375

Place chicken in one layer in a casserole dish.  Top evenly with sauerkraut. Spread dressing over the sauerkraut (sprinkle fennel seeds if using) and top with cheese making sure to cover each piece of chicken with cheese.  Place in pre-heated oven and bake for 30-35 minutes.

Serve with toasted Pumpernickel Bread
