Baked Chicken Tapenade Recipe - Gluten Free

Tapenada is French for capers. Tapenade is a dish from the Provençal region of France of finely chopped olives and capers. Frequently you will find anchovies, and poached flaked tuna. It is generally as a spread on bread, but is delicious on pasta or baked like this.
Serves 4
4 boneless skinless chicken breast
Tapenade
1 1/2 cups/343ml Kalamata or Gaeta olives, pitted
3 tablespoons/45ml capers, drained
2 garlic cloves, finely minced
1/4 cup/59ml minced fresh parsley leaves
1/8 teaspoon/.5ml red pepper flakes
1/2 teaspoon/2ml salt
1/8 teaspoon/.5ml freshly ground black pepper
1/4 cup/60ml extra virgin olive oil
In a food processor or mortar, combine the olives, capers, garlic, parsley, salt, and pepper. Slowly add the oil and pulse or work with the pestle into a coarse paste, retaining some bits of olive and caper for texture. Taste to adjust the seasonings. Stored tightly covered in the refrigerator, this will keep well for a week or two.
Preheat oven to 375F/190C/GM5
Place chicken on lightly oiled baking sheet. Spread ¼ of tapenade on each breast. Bake for 20-25 minutes or juices run clear on chicken.
Serve with roast potato and leafy green.

In the late 1970s and early 1980s, Amish friendship bread, as well as an interchangeable starter referred to as Herman (the name varies), became a popular exchange among friends who shared the starter as well as recipes. Quick Sauerkraut Recipe

Fermented foods are so good for your immune system and gut health.  No need to make huge crocks of the stinky stuff.  You can make a couple of ball jars worth.  I say if it tastes good eat it.  So I don’t have an expiration time on the kraut. 1 medium head cabbage (about 3pounds/1.4kg) 11/2 tablespoons/22ml course salt 1 tablespoon/15ml caraway seeds, optional (3) 32 ounce/950ml  wide mouth ball jars cheesecloth Some weights Remove the outer leaves of the cabbage.
