Polish Pickled Beets

Apricot & Cashew Energy Bars Recipe

These delicious bars are filled with wonderful healthy ingredients including apricots, cashews, hemp seed, unsweetened coconut, and oats; a great snack to send the kids to school with or take to work. Most packaged granola bars or snack bars are stuffed with artificial flavors, colors, added sugars,  so these are a great alternative, and super easy to make! Serves: 8 1 cup/5.3 ounces/151g dried apricots ½ cup/2 ounces/56g raw cashews ¾ cup/2 ounces/57g shredded unsweetened coconut ⅓ cup/1 ounce/27g rolled oats 2 tablespoons/30ml agave syrup 1 tablespoon.15ml coconut oil, melted 2 tablespoons/30ml hemp seeds ¼ teaspoon/1ml sea salt Line and 8 inch/20cm baking pan with parchment paper or saran wrap, and set aside. Pulse cashews in food processor until crumbly, place in a separate bowl. Pulse apricots in food processor until finely chopped. Chicken Fajitas Recipe--the real deal

Serves 4 1 - 1 1/2 pounds/450-775g. boneless, skinless chicken thighs or breasts 2 medium yellow onions sliced into thin strips 1 large red bell pepper sliced into thin strips 2 large green bell peppers sliced into thin strips Marinade ½ cup/125ml olive oil 1 ½ teaspoons/7ml liquid smoke or braggs liquid aminos 2 tablespoons/30ml apple cider vinegar 1 teaspoon/5ml honey ¼ cup/60ml water 1 tablespoon/15ml fresh lime juice (about 1 lime) ¼ teaspoon/1ml Worcestershire sauce 3 cloves garlic, minced ½ teaspoon/2ml oregano leaves 3 tablespoon Poultry Seasoning (optional) Combine the ingredients for the marinade and divide to marinate chicken and vegetables separately. Pat chicken dry and cut into 1/4 inch/6mm strips. Add chicken to the bowl of the marinade. Slice the vegetables and place them in the bowl with remaining marinade. Refrigerate both dishes for 30 minutes to 2 hours.  Preheat cast iron pan over medium high heat. Add about a teaspoon/5ml or so of canola oil

CASSIS...Who Knew?

What is Cassis?  It is a town located just east of Marseille in Provence-Alpes-Côte d'Azur.  As a tourist destination it is known for falaises (cliffs) and its many sheltered inlets.  Wine lovers know it for its full bodied, herby white wines produced from Clairette, and Marsanne as well as Doucillon Blanc primarily.  It is also famous for its rose wines, but on this it is overshadowed by its neighbor to the east, Bandol. Say cassis to others and immediately Creme de Cassis comes to mind.  To most it is a sickly sweet, thick deep purple syrup that it only made to mix with champagne for the famous “Kir Royale”.  Even the Kir Royale does not have a wonderful reputation.  It is thought to be the drink of old ladies at Sunday brunches.  What a tragedy this is.  Most of us know only of the imitators, the impostors of the most versatile of liqueurs.  If you are lucky enough to take a trip to France and happen to wander into the Dijon region (yes that Dijon) you will encounter the re

Family Cookie Party

Do you have fond memories of those favorite cookies that no will make anymore? You probably not only miss them, you also miss the tradition. How about a Family Cookie Party!!!!! You provide two to three recipes (depending on how complex). — Go to the attic and pull out those old family recipes!  We will plan, shop and do ALL the prep aration for your family (or just kids) baking party. The party usually takes less than an hour (kids baking is sometimes closer to two hours). YaDa Chef provides the ingredients and you provide the equipment (we bring oven thermometers to ensure your cookies are baked properly). Mini Lemon Thyme Potato Bites Recipe

Serves 6-8 2 pounds/900g russet potatoes cut into 1/2 inch/1.25cm slices 3 tablespoons/45ml extra­ virgin olive oil 1 teaspoon/5ml lemon juice ¼ teaspoon/1ml crushed red pepper ¼ teaspoon/1ml. dried thyme ¼ teaspoon/1ml. sea salt ¼ teaspoon/1ml. black pepper 1 large handful organic sprouts 1 teaspoon/5ml lemon zest Preheat the oven to 400F/200C/Gas6 Coat 2 baking sheets with cooking spray or parchment paper and set aside.  In a large bowl, combine potatoes, oil, lemon juice, red pepper, thyme, sea salt and black pepper; toss to combine.  Arrange the potato slices on prepared baking sheets, spacing them ¼ inch/62mm apart.  Bake for 25 minutes, rotating sheets halfway through, until potatoes are golden brown. Strawberry Roses

Wow! These are gorgeous and you won’t believe how easy they are to make! You will need about 2 minutes per strawberry… yes, they  are that easy! For the rose stems, you can use skewers or lollipop sticks. We recommend placing the stick or stem into the strawberry before you begin so you don’t crush the leaves once it’s done. These make a beautiful addition to a fruit plate or would be perfect for a bridal shower or Valentine’s day! The kids would even love them as a special snack dipped in whipped cream! Ingredients: Large fresh strawberries Lollipop sticks or plastic rose stems Small sharp paring knife Instructions: Wash and completely dry your strawberries. Insert the lollipop stick or rose stem in the bottom of each strawberry. (If you do it after they're cut it squishes the petals). Starting at the bottom, cut "petals" slightly angled towards the center of the strawberry but don't cut all the way through. You want to cut about 1/4" dow

Salmon Cakes Recipe

After another long day, I found myself hungry and staring at the shelves in the refrigerator.  I looked down and saw a piece of salmon just sitting there, but what to do with it?  I wanted something simple and quick.   Salmon Chipotle Cakes were my first thought, but we had no corn OR chipotle, so that ruled out that!  I wasn't about to make a trip to the store.  The problem with Salmon cakes or "burgers" are they often the are dry due to over cooking etc.  You have to add moisture.  Here's how I did it.  The prep took about 5 minutes and cooking time will depend on your penchant for doneness.  I did mine "cooked through", but just. The cooking time was about 8  minutes, just the right amount of time for the potatoes to cook.
