Easy Semi-Sourdough Sandwich Bread Recipe

Semi-Sourdough Sandwich Loaf YaDa Chef Makes 1 loaf 2 1/4 - 3 1/4 cups/281g-406g flour - we used all-purpose 1 tablespoons/9g  active dry yeast 1/2 cup/125ml sourdough starter 1/ cup plus 1 tablespoons/265ml warm tap water 1 teaspoon/5g salt 1 tablespoons/12g sugar 2 tablespoons/30ml oil - we used grapeseed oil canola is fine oil for spritzing In a large mixing bowl (of a food mixer), place 1 cup of flour, yeast, starter, sugar, salt and oil. Add warm water all at once. Mix on medium speed with a dough hook (you can start with a paddle then move to a dough hook later on - we didn’t want to have to wash anything extra) for about 2 minutes. Add 1 cup more of the flour. Mix on a medium to high speed (depending on your mixer) for 1 minute. Cut in butter until mixture resembles fine crumbs. Beat milk and egg; add to dry ingredients, stirring lightly. Add chocolate chips and knead into the dough on a surface lightly dusted with cocoa powder. Turn onto a lightly floured surface; roll to 1 inch/2.5 cm thickness. Cut into triangles. Babci's Galumpki (cabbage rolls)

Blanched cabbage leaves stuffed with rice and ground beef (I lightened them up with ground turkey), braised in a tomato sauce. These are one of my comfort foods. When these are cooking if I close my eyes I am walking into my Babci’s house. It took some time, but I think I found her “secret” ingredient...dill. 1 Baguette cut into rounds 1 Cup/250ml white wine 1/4 cup/60ml Marsala 1/2 cup/125ml/168g honey 1/2 cup/100g sugar 1 stick of cinnamon 2 teaspoons/10ml pure vanilla extract 1 1/2 cups/252g mixed dried fruit (do not use pineapple) 1 green apple diced into 1/4 inch/6.35mm pieces 1 pear diced into 1/4 inch/6.35mm pieces (make sure the pear is firm) 1/8 teaspoon/.5ml kosher or sea salt pinch of black pepper Juice of 1 lemon (apprx 1 Tablespoon/15ml) Zest of one lemon 1/2 cup/112g crumbled bleu or gorgonzola cheese Preheat oven to 375F/177C/Gas Mark 4 Lightly spray baguette rounds with olive oil on one side and place on a cookie sheet. Place in pre-heated oven for 7-10 minutes or until lightly browned. Remove from oven and set aside. In a large saucepan combine the wines, sugar, honey, vanilla, and cinnamon. Bring the mixture to a simmer and stir until honey and sugar are dissolved. add the fruit and salt. Bring to a boil, add the lemon zest, and lower the heat and simmer for 15-20 minutes.

Makes: 4 servings Total time: 30 minutes Ingredients 4 teaspoons/16g sugar 1/2 cup/115g butter, cubed 4 ounces/113g semisweet chocolate, chopped 1 cup/130g confectioners' sugar 2 eggs 2 egg yolks 1-1/2 teaspoons/1.7g instant coffee granules 3/4 teaspoon/4ml vanilla extract 6 tablespoons all-purpose flour 1/2 teaspoon/2ml salt Whipped cream, optional Additional confectioners' sugar, optional Preheat oven to 400F/204C/Gas 6 Grease the bottom and sides of four  ramekins; sprinkle each with 1 teaspoon/5ml sugar.
