Delicious smoothies! Fruits are full of vitamins that our eyes need to stay healthy. When you supplement those fruits with certain powerful greens and seeds, you can make delicious, eye-healthy breakfasts.

Blueberry, Peach & Flaxseed Smoothie

Blueberries and peaches are delicious sources of Vitamins C and E—antioxidants that help prevent the damage to our eyes that leads to AMD (Age-related Macular Degeneration). This smoothie recipe also contains flaxseeds which is one of the very best sources of Omega 3 fatty acids. These fatty acids help regulate the fluid retention and flow in our bodies, preventing dry eye and normalizing eye pressure to reduce the risk of glaucoma.

Mango-Avocado Smoothie

Avocados are a good source of lutein, and mangoes are full of Vitamin A, an antioxidant that helps to protect your cornea. Between the mango and avocado, this smoothie recipe is amazingly creamy. Include those chia seeds as well for some Omega 3 fatty acids!

Orange, Basil & Spinach Smoothie

Cacao in this recipe is a great source of zinc and a serving of almonds provides 25% of our daily Vitamin E. The bananas are full of beta-carotene which our bodies convert into Vitamin A for great eye health also!

I saw Chef Pepin make this on one of his shows, and thought, that is almost like the bread I used to make when I lived on the Beach in St. Augustine Florida and I had no yeast. I called it a cheat pizza dough, and I added tons of granulated garlic.   This is a quick and simple one pot meal. Many Mediterranean dishes are straight forward with a few ingredients and NOTHING to hide behind. I picked up this little recipe whilst working with a friend in Cannes. We not only used it cooking in villas, but taught it to our students as well. Use any firm white fish. Provencal Asparagus Tartlet Recipe

With Spring just a couple of weeks away we thought we would get a jump on the celebrations.  This is quick and easy hors d’oeuvres, a great starter or even a light lunch.  We used a classic pate brisee  recipe for the crust but use what ever you are comfortable with. These cocktails for the adults were a regional variation on Long Island iced tea, and they always showed up at clambakes on the beach. —Ann Liebergen, Brookfield, Wisconsin Ingredients 2 tablespoons sugar 1 ounce vodka 1 ounce light rum 1 ounce gin 1 ounce Triple Sec 1 ounce lime juice 1 ounce tequila 1 to 1-1/2 cups ice cubes 2 ounces cranberry juice Lemon slice, optional Directions In a mixing glass or tumbler, combine the sugar, vodka, rum, gin, Triple Sec, lime juice and tequila; stir until sugar is dissolved. Gluten Free and Dairy Free Italian Turkey "Meatballs" with Pesto Sauce Recipe

This is one of thos e “kitchen miracles”. You will wonder why you ever used eggs as a binder. Serves 4-6 1 1/2 lbs/675g ground turkey 1 onion minced, or 2 teaspoon/10ml dry onion 1 cup/225ml crisped rice crumbs 1/2 teaspoon/2ml garlic powder 1/2 teaspoon/2ml dry thyme 1/2 teaspoon/2ml Italian seasonings 1/4 teaspoon/1ml salt 8 turns on pepper mill 1 tablespoon/15ml Worcestershire Sauce 1 heaping tablespoon/15ml minced fresh parsley 2-3 tablespoons/30-45ml stock or water Preheat oven to 375F/190C/GasMark5 Combine turkey with all ingredients except water. It is always best to use day old bread.  If you can get some from your baker that is great, if not try and buy o loaf the day before.
