Spiced Chickpea (Garbanzo Beans) “Nuts” Recipe

When roasted in a hot oven, chickpeas become super crunchy. They’re a great low-fat substitute for nuts when salty cravings hit.
Ingredients
1 15-ounce/425g can chickpeas, rinsed
1 tablespoon/15ml extra-virgin olive oil
2 teaspoons/10ml ground cumin
1 teaspoon/5ml dried marjoram
1/4 teaspoon/1ml ground allspice
1/4 teaspoon/1ml salt
Preparation
Position rack in upper third of oven; preheat to 450F/230C/Gas 8
Blot chickpeas dry and toss in a bowl with oil, cumin, marjoram, allspice and salt. Spread on a rimmed baking sheet. Bake, stirring once or twice, until browned and crunchy, 25 to 30 minutes. Let cool on the baking sheet for 15 minutes.

Mrs. Cheney's McIntosh Cake Recipe

Polish Cucumbers / Polish Mizeria Recipe

These are another of the dishes that transport me to my Grandparents house on the pond in summer. Mizeria means “misery ” in Polish . It is said it is because this was a peasant dish originally. I use burpless or marketmore, but you can use English/seedless. Serves 4 2 Cucumbers, washed and thinly sliced 1/2 cup/125ml/60g sour cream, creme fraiche or mayo (sub 1/2 mayo) 1/2 teaspoon/2ml salt 1/2 teaspoon/2mil ground black pepper 1/2 tablespoon/7ml chopped fresh dill 2 spring onions or 3-4 chives, thinly sliced (optional) In a medium sized bowl mix sour cream, salt, pepper, dill and onions. Gently fold in the cucumbers to evenly coat. Let sit at room temperature for 30-60 minutes. The “sauce” will become more runny as the salt draws liquid from the cucumbers. Butterscotch Taffy Recipe

Ingredients: 1⁄2 cup/115g butter 48 large marshmallows 1 tablespoon/15ml water 2 cups/360g butterscotch chips 1⁄2 cup/58g chopped nuts, optional   In a heavy saucepan, combine butter, water, and marshmallows. Cook and stir over low heat until smooth. Add chips, stir till melted. Remove from heat and stir in nuts, if using. Pour in 8 inch/20cm square pan. Cool. Cut in 1 inch/2.5cm squares. Preserved Lemons in an “Instant”

Okay it’s really not an instant, in fact it takes about 30 minutes or if you do the oven way 3 hours--I prefer the stove top method. 1 lemon, cut into 1/4 inch/6mm thick slices 1/2 cup/125ml lemon juice 1 tablespoon/15ml/g coarse salt In a shallow sauce pan add the lemons, juice and salt. Bring to a boil until the salt dissolves. Reduce heat and let simmer for 30 minutes and the rinds become almost translucent and liquid is reduced by half. Oven method 6 lemons sliced into 1/4 inch/6mm slices 6 tablespoons 75ml/g coarse salt 1 cup/250ml lemon juice Preheat an oven to 200F/100C Place lemons in a baking dish just large enough to lay the slices in one layer. Sprinkle with salt and pour over the juice (it should just cover the lemons). St. Joseph’s Pasta with Sawdust Recipe

Serves 4 1lb/450g pasta, cooked according to package directions al dente (to the tooth) 2 tbsp/30ml olive oil 5 cloves garlic, chopped ⅛ tsp/.5ml red pepper flakes 1 cup/225ml onion, diced 1 bulb, 2 cups/450ml fresh fennel, cut into bite sized pieces 2 cans anchovies, drained and chopped 2 cups/794g crushed tomatoes 2 tbsp/30ml tomato paste 1 tbsp/15ml basil, chopped Heat oil in large pot, and saute in it the garlic and pepper flakes (30 seconds), add the fennel, onion and anchovies, saute until fennel is soft and onion is becoming translucent and anchovies “melt”(3-4 minutes).  Stir in tomato paste and coat all vegetables (1-2 minutes).  Add tomatoes and basil. Why Do We Sometimes Call Aluminum Foil "Tin Foil”?

In the early part of the 20th century, most of the foil produced was, in fact, made of tin. It was used in packaging—cigarette packs were lined with it and chewing gum sticks were wrapped in it—and also for wrapping leftover food. The problem was, it gave whatever it touched a distinctive “tinny” taste, just like foods left too long in a tin can.  Tin foil had other uses, too. It was also used as a recording medium for a time (Thomas Edison’s famous 1877 recitation of “Mary Had a Little Lamb” was on tin), but because the recordings didn’t last very long, manufacturers switched to wax cylinders. Roasted Eggplant Recipe

Roasting is one of the best ways to cook eggplant. 2 Medium Eggplants  1/4cup / 60ml Olive Oil 1/2teaspoon / 2.5g Sea Salt 1/2teaspoon / 2.5g Garlic Powder 1/4teaspoon/ 1.25g Black Pepper Instructions Preheat the oven to 400 degrees F (204 degrees C). Slice the eggplant crosswise to make circles, about 1/2 inch (1.25 cm) thick. Cut off the leafy end only after you are done slicing, so that you'll have more to grab onto as you slice. Arrange the eggplant slices on an extra large baking sheet in a single layer. Brush with olive oil, and sprinkle with sea salt, garlic powder, and black pepper. Flip and repeat the olive oil, salt, garlic powder, and pepper. Roast eggplant in the oven for  30-35 minutes , until soft, golden, and caramelized.
