palm beach personal chef

Print Friendly and PDF
When roasted in a hot oven, chickpeas become super crunchy. They’re a great low-fat substitute for nuts when salty cravings hit.
Ingredients
1 15-ounce/425g can chickpeas, rinsed
1 tablespoon/15ml extra-virgin olive oil
2 teaspoons/10ml ground cumin
1 teaspoon/5ml dried marjoram
1/4 teaspoon/1ml ground allspice
1/4 teaspoon/1ml salt
Preparation
Position rack in upper third of oven; preheat to 450F/230C/Gas 8
Blot chickpeas dry and toss in a bowl with oil, cumin, marjoram, allspice and salt. Spread on a rimmed baking sheet. Bake, stirring once or twice, until browned and crunchy, 25 to 30 minutes. Let cool on the baking sheet for 15 minutes.

Jacques Pepin's Flatbread Recipe

I saw Chef Pepin make this on one of his shows, and thought, that is almost like the bread I used to make when I lived on the Beach in St. Augustine Florida and I had no yeast. I called it a cheat pizza dough, and I added tons of granulated garlic. Serves 6 1 1⁄2 cups/188g regular all purpose flour 1 cup/250ml water 1⁄4 teaspoon/2ml baking powder 1⁄4 teaspoon/2ml salt 2 tablespoons/30ml olive oil 2 tablespoons/30ml water Dump everything (except the 2 tablespoons water) into a bowl and "stir it into a gooey stuff" as Jacques says. The dough will indeed be very wet, gooey, sticky. Stir in any optional ingredients. Heat a non-stick 10" / 25.4 cm skillet over medium to medium-high heat. Pour about a tablespoon of olive oil into the pan and then pour in the dough. Spread into one flat layer with a spoon or spatula. (A little oil on the spoon or spatula helps keep the dough from sticking to it.) Add remaining  water around the outside of the dough where it meets the pan; the o...

Irish Coffee Pudding Recipe

This is a GREAT dessert, by one of my favourite celebrity cooks, Jennifer Paterson.  She got this from an Irish family Serves 4  4 eggs 4 ounces/100g fine sugar (caster) 1 cup/250ml  very strong coffee or espresso 1 tablespoon Irish whiskey 1 tablespoon/15g gelatin 1 cup/250ml double or whipping cream extra whipped cream and chopped walnuts Separate the yolks and whites.  Put the yolks and half of the sugar into a bowl.  Whisk until quite smooth, then add 3/4 of the coffee.  Stand the bowl over a saucepan of hot, not boiling water and stir briskly until you achieve a custard and you can drag your finger through on the back of a spoon.  Stir in the whiskey.  Sprinkle the gelatin into the rest of the coffee and let it stand for 5 minutes, then dissolve it over hot water.  Blend with the coffee custard and leave to cool and stiffen slightly.  Whip the cream into peaks.  Whisk the egg whites until stiff, then fold in the remaining sugar...

Patriotic Pudding Cups Recipe

Patriotic Pudding Cups Recipe  This is what you will need if you would like to make it too: INGREDIENTS: - 3 packages White Chocolate Pudding (3.3 oz each) - 5.5 cups milk - Blue (Summertime) Oreos - Clear Cups - Food Coloring - Cool Whip DIRECTIONS: 1. Gather all of your supplies together. 2. Crush your Oreos and spoon a few tablespoons into the bottom of your clear cups. 3. From there you will make your pudding one at a time. Make the pudding as directed (mix box with 3 cups of milk), but be sure to add your food coloring. I like the gel food colors because they make the food a very vibrant color. Before it sets and it is mixed well, pour into your cup over your layer of crushed Oreos. You will continue on with your middle layer. Instead of mixing 2 cups of cold milk with your pudding, only mix 1.5 cups and add 2 cups of COOL WHIP Whipped Topping. I did this to make the middle layer more fluffy as well as make it a more white color than the off-white color of ...

TSA Agents Are Going After Snacks More Than Ever and Travelers Are Not Happy

Your checklist of things to remove and put in separate plastic bins in the airport security line just keeps getting longer. ANDREA ROMANO   July 05, 2018 A few months ago, you might have noticed that some TSA agents remove any food items  from their carry-on bags before putting them through the scanner. started making the fairly unusual request that travelers  Up until recently, the policy was simply a “recommendation” issued by the TSA to help with the screening process, according to  The Washington Post . But now, it looks like the policy is becoming more concrete. More travelers, including Shivani Vora of  The New York Times , have encountered agents who have asked them to remove any edible items, citing that “it’s a new policy.” Snack removal is supposed to actually speed up lines and help agents better check for explosive devices.
