Spiced Chickpea (Garbanzo Beans) “Nuts” Recipe

When roasted in a hot oven, chickpeas become super crunchy. They’re a great low-fat substitute for nuts when salty cravings hit.
Ingredients
1 15-ounce/425g can chickpeas, rinsed
1 tablespoon/15ml extra-virgin olive oil
2 teaspoons/10ml ground cumin
1 teaspoon/5ml dried marjoram
1/4 teaspoon/1ml ground allspice
1/4 teaspoon/1ml salt
Preparation
Position rack in upper third of oven; preheat to 450F/230C/Gas 8
Blot chickpeas dry and toss in a bowl with oil, cumin, marjoram, allspice and salt. Spread on a rimmed baking sheet. Bake, stirring once or twice, until browned and crunchy, 25 to 30 minutes. Let cool on the baking sheet for 15 minutes.

I saw Chef Pepin make this on one of his shows, and thought, that is almost like the bread I used to make when I lived on the Beach in St. Augustine Florida and I had no yeast. I called it a cheat pizza dough, and I added tons of granulated garlic. Far East Hoisin Noodles Recipe

  Serves 4 8 ounces/225g dried corn fettuccine or spaghetti 2 cups/450ml/225g snow peas 2 ½ tablespoon/37ml hoisin sauce - see recipe below 3 tablespoon/45ml rice wine (sub dry sherry) ½ cup/125ml vegetable broth or water 1 teaspoon/5ml canola oil 2 teaspoon/10ml ginger root, minced 1 head bok choy, roughly chopped 4 ounces water chestnut or sliced carrots 1 bunch scallions, diced 1 teaspoon/5ml sesame oil Peanuts for garnish Cook noodles according to package directions and drain.  Add snow peas to the pasta and blanch for 60 seconds.  Remove snow peas and set on paper towels. Mix hoisin, wine and broth or water in a small bowl.  In a wok over medium-high heat add oil. Stir fry ginger for 30 seconds.  Add bok choy and cook for 2-3 minutes. Previous research indicated that seafood has a smaller carbon footprint than other animal proteins, because fishing doesn't require farmland or the care of livestock. But a new study claims that catching fish using heavy nets that drag across the seabed - known as bottom trawling - emits about the same amount of carbon dioxide (CO2) globally as the aviation industry. Seabed sediments that act as huge carbon sinks are churned up during this kind of trawling - and this results in CO2 being released. Please read the packaging. Many hot dogs and sausages contain wheat gluten as a binder. Ingredients 1  (8-oz.)/225g block cream cheese, softened 1/3 cup/79ml   sour cream 2  jalapeños, minced 1 teaspoon   garlic powder 1 1/2 cups/181g   shredded cheddar 1 1/2 cups/192   shredded Monterey Jack 3  sweet corn, kernels removed (about 2 cups) 6  hot dogs, sliced into coins 4  green onion, thinly sliced Chips, for serving Directions In a large bowl, mix together cream cheese, sour cream, and jalapenos. Polish Cucumbers / Polish Mizeria Recipe

These are another of the dishes that transport me to my Grandparents house on the pond in summer. Mizeria means “misery ” in Polish . It is said it is because this was a peasant dish originally. I use burpless or marketmore, but you can use English/seedless. Serves 4 2 Cucumbers, washed and thinly sliced 1/2 cup/125ml/60g sour cream, creme fraiche or mayo (sub 1/2 mayo) 1/2 teaspoon/2ml salt 1/2 teaspoon/2mil ground black pepper 1/2 tablespoon/7ml chopped fresh dill 2 spring onions or 3-4 chives, thinly sliced (optional) In a medium sized bowl mix sour cream, salt, pepper, dill and onions. Gently fold in the cucumbers to evenly coat. Let sit at room temperature for 30-60 minutes. The “sauce” will become more runny as the salt draws liquid from the cucumbers.
