Spiced Chickpea (Garbanzo Beans) “Nuts” Recipe

When roasted in a hot oven, chickpeas become super crunchy. They’re a great low-fat substitute for nuts when salty cravings hit.
Ingredients
1 15-ounce/425g can chickpeas, rinsed
1 tablespoon/15ml extra-virgin olive oil
2 teaspoons/10ml ground cumin
1 teaspoon/5ml dried marjoram
1/4 teaspoon/1ml ground allspice
1/4 teaspoon/1ml salt
Preparation
Position rack in upper third of oven; preheat to 450F/230C/Gas 8
Blot chickpeas dry and toss in a bowl with oil, cumin, marjoram, allspice and salt. Spread on a rimmed baking sheet. Bake, stirring once or twice, until browned and crunchy, 25 to 30 minutes. Let cool on the baking sheet for 15 minutes.

I saw Chef Pepin make this on one of his shows, and thought, that is almost like the bread I used to make when I lived on the Beach in St. Augustine Florida and I had no yeast. I called it a cheat pizza dough, and I added tons of granulated garlic. Lobster Newburg Recipe

Pitted vs Unpitted Olives — Which Are Better?

Q. Are there any differences in flavor or texture among pitted and unpitted brine-cured  olives? A. To evaluate any differences between pitted and unpitted olives, we gathered both green and black brine-cured olives from deli sections at supermarkets, as well as olives packed in plastic and glass containers. After tasting many samples, it became clear that the pitted olives suffered on two counts: they tasted saltier and their flesh was mushier. They also lacked the complex, fruity flavors of the unpitted kind. Here's why: Before being packed for sale, fresh-picked olives are soaked in brine for periods of up to a year to remove bitterness and develop flavor. Once pitted, the olives are returned to the brine for packing, which can penetrate the inside of the olive and turn it mushy and pasty, as well as increase the absorption of salt. While growing up in Massachusetts, my family spent summers at our cottage. Provencal Asparagus Tartlet Recipe

With Spring just a couple of weeks away we thought we would get a jump on the celebrations.  This is quick and easy hors d’oeuvres, a great starter or even a light lunch.  We used a classic pate brisee  recipe for the crust but use what ever you are comfortable with. Far East Hoisin Noodles Recipe

  Serves 4 8 ounces/225g dried corn fettuccine or spaghetti 2 cups/450ml/225g snow peas 2 ½ tablespoon/37ml hoisin sauce - see recipe below 3 tablespoon/45ml rice wine (sub dry sherry) ½ cup/125ml vegetable broth or water 1 teaspoon/5ml canola oil 2 teaspoon/10ml ginger root, minced 1 head bok choy, roughly chopped 4 ounces water chestnut or sliced carrots 1 bunch scallions, diced 1 teaspoon/5ml sesame oil Peanuts for garnish Cook noodles according to package directions and drain.  Add snow peas to the pasta and blanch for 60 seconds.  Remove snow peas and set on paper towels.   In honour of Bastille Day. Serves 4-6 1 roasting chicken 2kg/4 pounds 1 tablespoon/15ml olive oil 1/2 head of garlic, mashed into a paste 1 tablespoon/15ml/15g Herbes de Provence 1/2 tablespoon/7ml sea salt 1 teaspoon/5ml fresh ground pepper 1 lemon cut into wedges 3 baking potatoes cut into large pieces Preheat oven to 475F/ 246C/Gas 9. Pat chicken dry. Rub with olive oil. Mix garlic, Herbes de Provence, oil, salt, and pepper in a small bowl. Rub mixture all over the inside and outside of the chicken. Place the chicken on a wire rack set inside a roasting pan with potatoes scattered around the chicken. Roast chicken until the skin begins to brown, 25–30 minutes. Easy Semi-Sourdough Sandwich Bread Recipe

Semi-Sourdough Sandwich Loaf YaDa Chef Makes 1 loaf 2 1/4 - 3 1/4 cups/281g-406g flour - we used all-purpose 1 tablespoons/9g  active dry yeast 1/2 cup/125ml sourdough starter 1/ cup plus 1 tablespoons/265ml warm tap water 1 teaspoon/5g salt 1 tablespoons/12g sugar 2 tablespoons/30ml oil - we used grapeseed oil canola is fine oil for spritzing In a large mixing bowl (of a food mixer), place 1 cup of flour, yeast, starter, sugar, salt and oil. Add warm water all at once. Mix on medium speed with a dough hook (you can start with a paddle then move to a dough hook later on - we didn’t want to have to wash anything extra) for about 2 minutes. Add 1 cup more of the flour. Mix on a medium to high speed (depending on your mixer) for 1 minute.
