Meatballs with Dill/Mint Sauce Recipe

When I think of dill and mint together I think of Greece. My favourite tzatziki always has a touch of mint. One day I was asked to make some “Danish Meatballs” with a creamy dill sauce. I happened to have an abundance of mint, it grows like a weed for me. So I chopped some up and had a hit on my hands.

Serves 4

1 pound/450g gluten free egg noodles, cooked according to package directions
1 pound /450g ground turkey
1 teaspoon/5ml sea salt
½ teaspoon/2ml black pepper
1 tablespoon onion, minced
½ cup/118ml rice crumbs
¼ cup/60ml melted butter or canola oil
2 tablespoons/30ml gluten free a/p flour
½ cup/125ml chicken stock
½ cup/125ml rice sour cream
1 tablespoon/15ml fresh dill
1 tablespoon/15ml fresh mint, chopped


Preheat oven to 375F/190c/GasMark as5

In a large bowl, combine ground turkey salt, pepper, onion and rice crumbs.  Moisten hands and roll into golf sized balls. Arrange in a single layer on a large, shallow baking sheet. Bake meatballs for 20-25 minutes until cooked through. In a saucepan heat oil. Whisk in flour until there are no lumps. Gradually pour in stock, whisking constantly until well blended. Add sour cream, dill and mint, stirring to combine.  Heat through.  Serve meatballs on pasta topped with cream sauce.

While growing up in Massachusetts, my family spent summers at our cottage. These cocktails for the adults were a regional variation on Long Island iced tea, and they always showed up at clambakes on the beach. —Ann Liebergen, Brookfield, Wisconsin Ingredients 2 tablespoons sugar 1 ounce vodka 1 ounce light rum 1 ounce gin 1 ounce Triple Sec 1 ounce lime juice 1 ounce tequila 1 to 1-1/2 cups ice cubes 2 ounces cranberry juice Lemon slice, optional Directions In a mixing glass or tumbler, combine the sugar, vodka, rum, gin, Triple Sec, lime juice and tequila; stir until sugar is dissolved. Quick Sauerkraut Recipe

Fermented foods are so good for your immune system and gut health.  No need to make huge crocks of the stinky stuff.  You can make a couple of ball jars worth.  I say if it tastes good eat it.  So I don’t have an expiration time on the kraut. 1 medium head cabbage (about 3pounds/1.4kg) 11/2 tablespoons/22ml course salt 1 tablespoon/15ml caraway seeds, optional (3) 32 ounce/950ml  wide mouth ball jars cheesecloth Some weights Remove the outer leaves of the cabbage. Do not wash the cabbage. The beneficial bacteria is in the cabbage, don't wash it all away.Slice the cabbage by first slicing in half, then in quarters. Remove the core and slice the cabbage lengthwise into thin ribbons. Place the cabbage into a large bowl and sprinkle with salt. Pad Thai With Pork Recipe

  6 ounces/170g, dry rice noodles 1 tablespoon/15ml dark sesame oil 1 tablespoon/15ml cornstarch 1 pound/450g thinly slice pork loin 1/4 cup/60ml Thai fish sauce 1/4 cup/60ml fresh lemon juice 3 tablespoons/45ml/39g light brown sugar 1/4 cup/60ml peanut oil (sub vegetable or sunflower oil) 4 cloves minced garlic 1/2 tablespoon dried pepper flakes (sub 1 red thai chili, minced) or to taste 1 green onion thinly sliced on the bias 3 large eggs, beaten 1 cup/184g fresh bean sprouts 1/2 cup/65g roasted peanuts, chopped 1 lime cut into quarters Small handful cilantro, chopped (we use flat leaf parsley) Soak rice noodles in a bowl of hot water for 40-45 minutes then drain. Roasted Eggplant Recipe

Roasting is one of the best ways to cook eggplant. 2 Medium Eggplants  1/4cup / 60ml Olive Oil 1/2teaspoon / 2.5g Sea Salt 1/2teaspoon / 2.5g Garlic Powder 1/4teaspoon/ 1.25g Black Pepper Instructions Preheat the oven to 400 degrees F (204 degrees C). Slice the eggplant crosswise to make circles, about 1/2 inch (1.25 cm) thick. Cut off the leafy end only after you are done slicing, so that you'll have more to grab onto as you slice. Arrange the eggplant slices on an extra large baking sheet in a single layer. Brush with olive oil, and sprinkle with sea salt, garlic powder, and black pepper. Flip and repeat the olive oil, salt, garlic powder, and pepper. Roast eggplant in the oven for  30-35 minutes , until soft, golden, and caramelized.
