Welsh Cookies Recipe



This recipe was given to us by a client, Bridget Moreno. It was passed down from her Great Grandmother to her Grandmother, Elaine Gleason nee Thomas. The story is that Welsh housewives would make this for their husbands’ lunch pails/buckets, most likely to take with them down in the mines.  Make by hand or with an electric mixer with a paddle attachment.
Cook on an electric griddle.  Enjoy with a cup of tea.  These cookies keep well in a Ziploc bag or sealed container.
Fort Lauderdale Personal Chef - Welsh Cookies Recipe

4cups/500g flour (1cup/125g for rolling out dough)
1cup/192g white sugar
1tablespoon/11g/15ml baking powder
1 ½ teaspoons/7ml cinnamon*
1cup/220g Crisco or vegetable shortening (we imagine that the original recipe used lard)
2 eggs, beaten
1/2 cup/125ml milk
1teaspoon/5ml vanilla
1 cup/150g raisins
Combine dry ingredients.  Cut in Crisco (this can be done with a fork or a paddle attachment of a mixer).  Add wet ingredients.  Add raisins.  Do not over mix.  Roll dough on floured surface to 1/8-1/4 inches/3-6mm thick.  Cut with a round glass or biscuit cutter.  Cook on griddle (300F/150C).  Flip when one side is lightly browned.  Cool on wire rack.
  *(Original recipe calls for 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, but I am not a nutmeg fan so I increase the cinnamon)

In the late 1970s and early 1980s, Amish friendship bread, as well as an interchangeable starter referred to as Herman (the name varies), became a popular exchange among friends who shared the starter as well as recipes. Homemade Turkey Ham Recipe

Making your own cured turkey “ham”, is not only healthier, but in our opinion much tastier.  It will be much lower in sodium and be preservative free.  You are going to use turkey in 3 different forms. Cubed, minced and pureed.  This will give it a more “ham” like texture. Roasted Eggplant Recipe

Roasting is one of the best ways to cook eggplant. 2 Medium Eggplants  1/4cup / 60ml Olive Oil 1/2teaspoon / 2.5g Sea Salt 1/2teaspoon / 2.5g Garlic Powder 1/4teaspoon/ 1.25g Black Pepper Instructions Preheat the oven to 400 degrees F (204 degrees C). Slice the eggplant crosswise to make circles, about 1/2 inch (1.25 cm) thick. Cut off the leafy end only after you are done slicing, so that you'll have more to grab onto as you slice. Arrange the eggplant slices on an extra large baking sheet in a single layer. Brush with olive oil, and sprinkle with sea salt, garlic powder, and black pepper. Quick Sauerkraut Recipe

Fermented foods are so good for your immune system and gut health.  No need to make huge crocks of the stinky stuff.  You can make a couple of ball jars worth.  I say if it tastes good eat it.  So I don’t have an expiration time on the kraut. 1 medium head cabbage (about 3pounds/1.4kg) 11/2 tablespoons/22ml course salt 1 tablespoon/15ml caraway seeds, optional (3) 32 ounce/950ml  wide mouth ball jars cheesecloth Some weights Remove the outer leaves of the cabbage. Do not wash the cabbage. The beneficial bacteria is in the cabbage, don't wash it all away.Slice the cabbage by first slicing in half, then in quarters. Remove the core and slice the cabbage lengthwise into thin ribbons. Place the cabbage into a large bowl and sprinkle with salt. Chinese Chicken Teriyaki & Bok Choy Egg Rolls

  T he original recipe came from Nakano.  We have changed it up a bit to accommodate our clients tastes. Makes 18 egg rolls Serving Size: 2 egg rolls ⅓ cup/79ml soy sauce ¼ cup/60ml  Seasoned Rice Vinegar 1 teaspoon roasted sesame oil 2 tablespoon honey 2 cloves garlic, minced 2 teaspoons fresh ginger, finely minced 3 tablespoon cornstarch 1 tablespoon canola oil 1 pound/450g of chicken breast, small diced 1 tablespoon canola oil ½ cup celery/115g, sliced thin 1 ½ cups/150g Napa cabbage, thinly sliced ¼ cup/12.5g carrots, thinly sliced 2 scallions, sliced 2 cloves garlic, minced Salt and pepper 18 egg roll wrappers 1 cup/250ml canola oil, to sauté Combine soy sauce, Seasoned Rice Vinegar, sesame oil, honey, garlic, ginger and cornstarch. Frankfurter, PIckled Beets, and Horseradish Salad

Jewish cooking has a wonderful thing called khrame, which is horseradish sauce with beets. It is probably this that makes us think of this combination. 6 frankfurters 6 small pickled beets, drained and chopped (see pickled beets recipe here) 2 onions, chopped 2 teaspoons/10ml capers olive oil wine vinegar 1/2 teaspoon/2ml finely grated fresh horseradish OR 1 teaspoon/5ml bottled red horseradish cream to taste salt and freshly ground pepper Put your frankfurters into boiling water, bring back to a boil, remove from heat, and leave for 10 minutes. Drain, chop, and place in a bowl with the beets, onions and capers. Make a dressing with the remaining ingredients. Be sparing with the vinegar as the beets may be tart.  Add a little cream to the horseradish before adding it to the dressing if you find it too strong. Mix the dressing with the frankfurter mixture. Butterscotch Taffy Recipe

Ingredients: 1⁄2 cup/115g butter 48 large marshmallows 1 tablespoon/15ml water 2 cups/360g butterscotch chips 1⁄2 cup/58g chopped nuts, optional   In a heavy saucepan, combine butter, water, and marshmallows. Cook and stir over low heat until smooth. Add chips, stir till melted. Remove from heat and stir in nuts, if using. Pour in 8 inch/20cm square pan. Cool. Cut in 1 inch/2.5cm squares.
