Healthy (and Organic) Snack Ideas For Kids

It is tough to find good snacks for kids in this day and age of highly processed, fast foods. Here are some healthy ideas for snacks...all organic of course.

These ideas are great for adults too!  Need a little extra boost at the office between meetings and meals?  Here are a few solutions.
  • Apple Slices and Peanut Butter (try adding a bit of organic maple syrup to the peanut butter and microwaving for an extra special treat)
  • Fruit Slices and Soy Cream Cheese (a tub of vegan soy cream cheese (at room temperature) with 1/4 cup undiluted apple juice or orange juice concentrate and a dash of cinnamon. Stir vigorously until smooth. Serve with apple and pear slices, strawberries, and banana chunks for dipping.
  • Whole Wheat Zucchini Muffins
  • Tortilla Chips sprinkled with Cheese (or cheese alternative)
  • Fruit Skewers (simply cut any fresh fruit in season into bite-sized chunks and alternate on wooden or bamboo skewers with grapes)
  • Dried fruits (such as organic raisins, dates, apricots)
  • Crackers and Cheese
  • Hard Boiled Eggs
  • Ants on a Log (celery or cream cheese with peanut butter and raisins)
  • Carrots, Celery, and Pita Triangles with Hummus Dipping Sauce
  • Banana Pops (dip in yogurt, roll in crushed grains, and freeze)
  • Frozen Grapes
  • Yogurt Cups or Smoothies
  • Dehydrated Veggies 
  • A Box of Raisins
  • A Bowl of Mixed, Raw Nuts

I saw Chef Pepin make this on one of his shows, and thought, that is almost like the bread I used to make when I lived on the Beach in St. Augustine Florida and I had no yeast. I called it a cheat pizza dough, and I added tons of granulated garlic. Mrs. Cheney's McIntosh Cake Recipe

Baked Feta Pasta Recipe

It's not that I didn't think the idea sounded delicious. It's just that the whole thing seemed too simple. Obviously roasting a block of feta with bursting tomatoes is going to be amazing. But is it good enough to break the internet?  My answer, begrudgingly, is yes. It's genius. But dare I say, not perfect? Below are my thoughts.  You don't need to change the oven temperature.  The  OG recipe  calls for baking the feta with the tomatoes at 400° for 30 minutes then kicking up for the last 10 minutes. After 30 minutes in the oven, I found my feta well on its way to a pretty shade of golden on top. Gluten Free Vegan Burger Recipe

We have done these with black beans, white beans, and garbanzo beans. Try them with your favourite and add whatever other veggie you like to make them your own. This calls for “Steak Seasoning”, but use any combination you like. They freeze great uncooked too. Throw a couple in the freezer for a quick nutritious meal any time. Bourbon Glazed Beef Tenderloin Recipe

Bourbon and steak. Whether you are a “man's man” or a “woman's woman” this one will be sure to please. Serves 4 3/4 cup/180ml Bourbon whiskey 1/2 cup/125ml Braggs Liquid Aminos (or soy sauce) 1/4 cup plus 2 tablespoons/30ml brown sugar 1/4 cup plus 2 tablespoons/90ml balsamic vinegar 1/4 cup/60ml Worcestershire sauce (4) 4 ounce/115g beef tenderloin or sirloin steaks 1 tablespoon/15ml olive oil Combine bourbon, liquid aminos, brown sugar, vinegar and Worcestershire together in a small bowl.  Place steaks in a shallow dish, and spoon ¼ cup/60ml bourbon mixture on top.  Toss to coat.  Set remaining mixture aside.  Coat a large skillet with olive oil.  Place on high heat until hot. Quinoa (pronounced keen-wah) has been grown for thousands of years in the Andes mountains in South America. Fish Not As Carbon Friendly As Previously Thought

Previous research indicated that seafood has a smaller carbon footprint than other animal proteins, because fishing doesn't require farmland or the care of livestock. But a new study claims that catching fish using heavy nets that drag across the seabed - known as bottom trawling - emits about the same amount of carbon dioxide (CO2) globally as the aviation industry. Seabed sediments that act as huge carbon sinks are churned up during this kind of trawling - and this results in CO2 being released. "The ocean is full of little creatures that we call the plankton, microscopic algae and microscopic shrimp and so forth," says Dr Sala, explorer-in-residence at National Geographic and leader of the study published in Nature.
