Mediterranean Roast Fish with Tomatoes and Potatoes Recipe

  This is a quick and simple one pot meal. Many Mediterranean dishes are straight forward with a few ingredients and NOTHING to hide behind. I picked up this little recipe whilst working with a friend in Cannes. We not only used it cooking in villas, but taught it to our students as well. Use any firm white fish. Serves 4 1 pound/450g Sea Bass or other firm fleshed white fish, seasoned with salt and pepper 1 tablespoon/15ml olive oil, plus extra for drizzling 4 medium potatoes, sliced 1/4 inch/6.35mm thick unpeeled 1 small yellow onion, or 2 shallots, diced 1 clove of garlic minced 6 Roma/Plum tomatoes, peeled, seeded and diced Small handful of kalamata or nicoise olives (pits in) 2-3 branches of fresh time Juice of half a lemon 1 teaspoon salt 1/2 teaspoon ground black pepper Preheat oven to 375F/190/Gas5 In a large heavy bottom casserole or fry pan over medium heat add olive oil,. Baked Ginger and Lemon Chicken Recipe

  Ingredients: 1 tablespoon crushed red pepper flakes (optional) 1 inch piece /2.5cm fresh ginger, finely chopped 6 tablespoons/90ml soy sauce 20 ounces/570g bone-in, skin-on chicken thighs and drumsticks 2 red onions, quartered 1 lemon, zested then sliced into rings 1 tablespoon/14g unsalted butter 2 tablespoons/30ml honey To Serve Steamed rice Selection of greens, like kale, broccoli or green beans 1 tablespoon/14g unsalted butter ½ tablespoon/7ml vegetable oil 1 shallot, sliced 3 garlic cloves, sliced Directions: 1. Preheat the oven to 400F/200C/Gas 6 2. In a small bowl, combine the crushed red pepper flakes, if using, with the ginger and soy sauce. Place the chicken in a roasting pan or baking dish large enough not to crowd the pieces; they should have two finger’s widths of space between them. Easy Patriotic Cheesecake Strawberries Recipe

  These little strawberries are pretty, elegant, delicious, can be made ahead, and come together in about 20 minutes from beginning to end. They can be used as a 4th of July dessert idea, or as a fresh after-dinner snack. Recipe makes 24 strawberries... which in my house is enough to feed, well, me. Be sure to make plenty! Ingredients: 24 large, ripe strawberries 12 oz. cream cheese, softened 1 tsp. vanilla extract 1/4 C. powdered sugar 24 blueberries Instructions. 1. In a medium mixing bowl, beat together the cream cheese, powdered sugar, and vanilla with an electric mixer until fluffy and well mixed. Set aside. 2. With the tip of a sharp knife, hollow out the center of the strawberry from the hull, going as deeply as you can without piercing the bottom.
