Lentil and Vegetable Salad Recipe

Lentils are just full of protein and are one of the oldest domesticated crops. Lentils come in a wide variety of colours, the most common are red, green and brown. Pitted vs Unpitted Olives — Which Are Better?

Q. Are there any differences in flavor or texture among pitted and unpitted brine-cured  olives? A. To evaluate any differences between pitted and unpitted olives, we gathered both green and black brine-cured olives from deli sections at supermarkets, as well as olives packed in plastic and glass containers. After tasting many samples, it became clear that the pitted olives suffered on two counts: they tasted saltier and their flesh was mushier. They also lacked the complex, fruity flavors of the unpitted kind. Here's why: Before being packed for sale, fresh-picked olives are soaked in brine for periods of up to a year to remove bitterness and develop flavor. Once pitted, the olives are returned to the brine for packing, which can penetrate the inside of the olive and turn it mushy and pasty, as well as increase the absorption of salt. That saltier taste can mask subtler flavors. If you have the time, it makes sense to buy unpitted olives and pit them yourself

Preserved Lemons in an “Instant” Recipe

Okay it’s really not an instant recipe, in fact it takes about 30 minutes or if you do the oven way 3 hours--I prefer the stove top method. 1 lemon, cut into 1/4 inch/6mm thick slices 1/2 cup/125ml lemon juice 1 tablespoon/15ml/g coarse salt In a shallow sauce pan add the lemons, juice and salt. Bring to a boil until the salt dissolves. Reduce heat and let simmer for 30 minutes and the rinds become almost translucent liquid is reduced by half. Oven method 6 lemons sliced into 1/4 inch/6mm slices 6 tablespoons 75ml/g coarse salt 1 cup/250ml lemon juice Preheat an oven to 200F/100C Place lemons in a baking dish just large enough to lay the slices in one layer. This is an easy  orange ice cream recipe that results in a creamy sweet orange taste, similar to what you may call a “Dreamsicle” or “Creamsicle” flavor. Please Note: Makes approximately one quart of ice cream.
