Potage Parmentier/Vichyssoise (Leek and Potato Soup) Recipe

  You can reduce cooking time using a pressure cooker. Add all the ingredients except for the cream. Place the lid and bring to full pressure. Lower the heat to stabilize and cook for 5 minutes. Remove from heat and release the pressure. Take off the cover and simmer for 10-15 minutes uncovered then follow the remaining steps. Serves 4 1 pound/450 grams sliced potato 1 pound leeks, rinsed and sliced including the tender part of the green 2 quarts/2 liters water or chicken stock 1 tablespoon/15ml salt 1/4 teaspoon/1ml ground white pepper (optional) 1/4 cup/60ml heavy cream Add the potato, leeks, water or stock and salt to a large pot.  Bring to a boil on hight then turn down heat to medium and simmer partially covered for 30-40 minutes or the vegetables are very tender.  Place the mixture in two (2) batches in the blender or your can sieve through a food mill (smallest disk).  Once pureed pour in the cream. Fresh Sardines Recipe and Health Benefits

Looks like sardines are on the menu for tonight's dinner. Sardines Procida Recipe & Their Benefits Serves 4 1 pound/450g fresh Sardines 1/2 cup//118ml/64g Cornstarch (you can substitute flour) 1/2 tablespoon/7ml olive oil 1 clove garlic, minced 1 medium onion, cut in thin slices 1/2 red pepper, diced 1 teaspoon sea salt 1 teaspoon/5ml tomato paste 1/2 cup/4 ounces/125ml dry white wine 2 tablespoons/30ml white vinegar 2 tablespoons/30ml capers Remove the heads, guts and back bones. Rinse and pat dry. Dredge in cornstarch. Heat olive oil in a large skillet over medium-high heat. When the oil is hot, saute the sardines in two (2) batches for 1-2 minutes per side. They will be brown and crispy. Remove to a plate, and keep warm. In the same skillet over medium heat, add the onions and cook until they begin to get soft (about 1 minute). This brownie recipe is an adaption of a mid-to-late-19th century brownie or fudge square recipe (it all depends on who you ask). This recipe was written before the invention of baking powder, so no leavening agents are used.. 1/2 cup/115g unsalted butter 1 cup/192g raw granulated sugar 2 large eggs, room temperature 1/4 teaspoon salt 1/2 teaspoon/2ml pure Madagascar vanilla extract 6 tablespoons/42g dark chocolate baking (unsweetened) cocoa 2 tablespoons/30ml grapeseed oil 1/2 cup/63g all purpose flour Preheat oven to 350F/176C/Gas 4 Cream butter and sugar well. Add eggs one at a time, stirring well. Add remaining ingredients in order listed, mixing well after adding each. Pour into a generously greased 8 inch by 8 inch/20cm x 20cm glass pan, in a moderate oven, 350 degree fahrenheit, for 20-30 minutes. Hand Pies with Fruit Recipe

3 cups/750ml chopped summer fruit, such as peeled and pitted peaches or nectarines, strawberries or pitted cherries 5 tablespoons sugar 1 1/2 tablespoon all-purpose flour, plus more for dusting 2 tablespoons/30ml heavy cream 2 rolled out 9-inch pie dough Preheat the oven to 375F/190C/Gas 5 On a floured surface, roll out dough until about 1/8-in thick. Cut into twelve (5-inch) circles, rerolling dough as needed.  In a medium bowl, toss together fruit, sugar and flour. (Do this just before filling the pies; if done too far in advance, the mixture can get too juicy. Use less or more sugar, as desired, depending on fruit’s natural sweetness.)  Working one at a time, spoon some filling into the center of a circle of dough; brush edges with water.  Fold over into a half moon and crimp edges to seal, then cut a small slit in the middle as an air vent. An upcoming cooking therapy job will require us to replicate the show, Cupcake Wars. Now the research begins. We've never heard of the show so now to see how we will incorporate the key elements of it for the kids we will be working with the middle of the month. Thank goodness for YouTube!

Family Cookie Party

Do you have fond memories of those favorite cookies that no will make anymore? You probably not only miss them, you also miss the tradition. How about a Family Cookie Party!!!!! You provide two to three recipes (depending on how complex). — Go to the attic and pull out those old family recipes!  We will plan, shop and do ALL the prep aration for your family (or just kids) baking party. The party usually takes less than an hour (kids baking is sometimes closer to two hours). YaDa Chef provides the ingredients and you provide the equipment (we bring oven thermometers to ensure your cookies are baked properly).
