Avocado Salad (Ensalada de Aguacate) Recipe - Fort Lauderdale Personal Chef

This is a typical Cuban salad, usually served with a traditional Cuban dinner
Watercress 
2 large Florida avocados peeled, halved lengthwise and sliced
1 small mild onion, sliced vertically
salt, to taste
fresh ground black pepper, to taste
½ cup pure Spanish olive oil
3 tbsp fresh lemon juice
1 tsp parsley, finely chopped

Directions:
Line the platter with the onions, then watercress with the avocado slices on top.
Sprinkle with salt and pepper.
Whisk together the oil and lemon juice then drizzle over the salad.
Sprinkle with the parsley and serve.
