Fort Lauderdale Personal Chef - Sauteed Chicken with Squash and Carrot Ribbons Recipe


Serves 4 

Ingredients




  • 1 pound yellow squash
  • 1 pound carrots
  • 1/4 cup ghee, divided
  • 4 boneless, skinless chicken breasts, pounded thin
  • 1 tsp. Celtic sea salt
  • 1/2 cup chopped, fresh basil leaves
  • Juice of 1 lemon
  • 1/4 cup chopped, fresh flat-leaf parsley 


  • Directions


    Using a vegetable peeler, cut the squash and carrots into ribbons. Place them in a large bowl. 

    Heat a large skillet over medium-high heat for 1 minute. Add 2 tablespoons of the ghee, let it melt and swirl to coat the pan. Season both sides of the chicken with 1/2 teaspoon of the salt and place the chicken in the pan. Cook for 4 minutes, until the bottom is just turning golden brown. Using tongs, flip the chicken and cook 3 to 4 minutes more, until cooked through. Set the chicken aside on a plate. 

    Melt the remaining 2 tablespoons ghee in the pan and swirl to coat. Add the squash and carrots and cook for 2 or 3 minutes, or until just soft, tossing occasionally. Remove from the heat, add the basil, lemon juice and remaining 1/2 teaspoon salt and toss. 

    Serve the chicken with the vegetable ribbons and garnish with parsley.

    White Fish Gravlax Serves 4 Here is a great starter, light lunch or a fantastic item for your holiday buffet.  If you have problems with gluten substitute the wheat bread for a flax or millet bread or leave it out entirely and eat on some mixed greens.   Gravlax 5 ounces/145 grams white fish, bass, snapper-I used tilapia (sushi grade) 2 tablespoons/30 ml coarse salt 2 tablespoons/30 ml caster sugar 1 tablespoon/15 ml of ground black pepper 1/2 teaspoon/2 ml ground allspice 1/2 teaspoon/2 ml ground cloves 8-10 pieces of fresh dill fronds Mustard Butter 2 Tablespoons/30 ml 28g of unsalted butter, softened 2 Tablespoons/30 ml of dijon mustard.     You can use almost any lettuce, such as chicory, or frisee, or Boston Bib if you are busing large heads, cut them in half. We made these pescartarian because of the shrimp stock, but vegan is easy with vegetable stock, or if serving with beef, a  beef stock and bacon.     Easy Soft Caramel Recipe - No Candy Thermometer Needed

    These easy soft caramels can be whipped up in about 15 minutes. You do not need a candy thermometer to m ake these caramels and they literally melt in your mouth! EASY 4 INGREDIENT SOFT CARAMELS (NO CANDY THERMOMETER REQUIRED) INGREDIENTS 1½ sticks butter ½ cups/100g sugar 3 tablespoons/45ml light corn syrup 14 ounces/415ml/397g sweetened condensed milk optional: coarse sea salt, ½ teaspoon/2ml vanilla (see note) INSTRUCTIONS In a medium sauce add butter and sugar and stir over medium heat until melted. Stir in corn syrup and condensed milk. Bring to a boil and then decrease to simmer 7-10 minutes or until mixture achieves deep golden color, stirring constantly. Aluminum foil is a thin sheet of  metal foil  or  metal leaf  composed of an  aluminum alloy  containing roughly 92–99 percent aluminum.
